Grasshopper Pie

Jackson, "Mom, did you know me and Grandpa Vaughn are a lot alike?" "Why is that, Jackson" I ask. He replies with a smile, "Because grasshopper pie is our favorite! Can we make some?" SO...We did. How could I resist that sweet little boys request.

"When do we get to go outside and get the grashoppers to chop up and put in. Just kidding."

Good to the last drop. It really is that good!

TRY IT SOMETIME-
GRASSHOPPER PIE- named for it's color, not what goes in it :)

1 1/2 cups chocolate wafer cookie crumbs
1/4 cup butter, melted
1/4 cup milk
1/8 teaspoon peppermint extract
About 12 drops green food coloring
1 jar marshmallow creme
2 cups heavy whipping cream, whipped

Combine wafers and butter.
Press into 9" x 13" x 2" baking dish, reserving about 1/4 cup for the topping.

Filling: gradually add milk, peppermint, and food coloring to the marshmallow creme. 
Mix well until blended.
Fold in whip creme and pour into pan.

Sprinkle on reserved crumbs.

Freeze

I used to shy away from cooking with the kids. I think they are old enough now to be a real help. There is a lot I let them do on their own now. Jackson can't quite read well enough to understand the recipe but both he and Jordyn can bake a few things on their own. I am enjoying teaching them and seeing how they love to cook. Funny, because I actually dread cooking.

The important thing about cooking with kids is space, followed closely by division of labor. (Making sure everyone has a job to do).

I've never tried grasshopper pie. Probably for the same reason that I never ate coffee cake, because I didn't like coffee! Oh, the joys I've missed!
