Scrumptious Chocolate Chip Banana Bread

Mother Approved (at least in the easy to make category)
Banana Bread Recipe
Prep:15 min
Bake: 1 hour
Cool: 2 hours
Makes 2 loaves

1 1/4 cups sugar
1/2 cup butter softened
2 large eggs
1 1/2 cups mashed very ripe bananas (3-4)
1/2 cup buttermilk or 1/2 cup milk mixes with 1/2 tsp lemon juice
1 tsp vanilla
2 1/2 cups flour
1 tsp baking soda
1 tsp salt
1/2 bag chocolate chips or a full bag if you really love chocolate

1. Move oven rack to lowest position. Heat oven to 350. Grease bottoms only of one 9x5 inch pan or two 8x4 inch pans

2. In large bowl, stir sugar and butter until well mixed. Stir in eggs until well mixed. Stir in bananas, buttermilk and vanilla. Beat with spoon until smooth. Stir in flour, baking soda and salt just until moistened. Stir in chocolate chips. Pour into pans.

3. Bake 8 inch loaves about one hour, 9 inch loaf 1 hour 15 minutes or until toothpick inserted in center comes out clean. Cool 1 minutes in pans on wire rack.

4. Remove from pans and cool on wire rack.

No Way! I made banana bread this morning, too. I sprinkled a little sugar on top. It makes a yummy crust.

When Joy told me she was making banana bread with chocolate chips I said, "That sounds like Jen!" I had it for the first time at Jen's. Good stuff.
